Add 2-3 table spoons of water to ease coating and avoid stick in the saucepan. Lower the heat, cover and simmer for 10 minutes. Let the Chicken cook in its own water. Add in the coconut milk. Simmer until the gravy becomes thick. This should take about 15 – 20 minutes. Serve piping hot with rice!
