WAYS OF USING OUR DIP MIXES DIPS – The most popular way of serving our Seasoning Mixes is by making a dip. The dips can be served with potato chips, tortilla chips, pretzels, fresh veggies, and much more. All of our dips are made the same way – one cup of sour cream and one cup of real mayonnaise. (Don’t use Miracle Whip. It has too much sugar and dramatically alters the taste of the dip.) To create a stronger flavor, use 3/4 cup of sour cream and mayo instead of one full cup of each. SPREADS – Our spreads are wonderful on fresh veggies, crackers, breads, bagels, steamed veggies, muffins, and more. Try them on hamburgers and other sandwiches. They are fabulous. Instead of sour cream and mayo, you make them with sour cream and cream cheese or all cream cheese for a thicker spread. CHEESE BALLS – A savory cheese ball can be made from all of our seasoning mixes. Just use 16 oz. of cream cheese. As an option, you may roll the cheese ball in crushed nuts, bacon pieces (cut up real bacon, not imitation bacon bits), chives, etc. Refrigerate for four hours. Serve with crackers, crusty breads, cucumber slices, stuffed celery and bagels. SALAD DRESSINGS – All of our seasoning mixes can be made into sensational salad dressings. Just make the dip recipe (sour cream and mayo). It will be thick at this point. If you want to thin it slightly, add a teaspoon of milk or cream. To create a stronger flavor, use 3/4 cup of sour cream and mayo instead of one full cup of each. Let the flavors blend in the fridge for a couple of hours at least. TIPS FOR USING OUR DIP RECIPES! From the time the second person on earth mixed some chile peppers with meat and cooked them, the great chili debate was on; more of a war, in fact. The desire to brew up the best bowl of chili in the world is exactly that old. Perhaps it is the effect of Capisicum spices upon man’s mind; for, in the immortal words of Joe DeFrates, the only man ever to win the National and the World Chili Championships, “Chili powder makes you crazy.” That may say it all. To keep things straight, chile refers to the pepper pod, and chili to the concoction. The e and the i of it all. The great debate, it seems, is not limited to whose chili is best. Even more heated is the argument over where the first bowl was made; and by whom. Estimates range from “somewhere west of Laramie,” in the early nineteenth century – being a product of a Texas trail drive – to a grisly tale of enraged Aztecs, who cut up invading Spanish conquistadors, seasoned chunks of them with a passel of chile peppers, and ate them. Never has there been anything mild about chili. Our travels through Texas, New Mexico, and California, and even Mexico, over the years have failed to turn up the elusive “best bowl of chili.” Every state lays claim to the title, and certainly no Texan worth his comino (cumin) would think, even for a moment, that it rests anywhere else but in the Lone Star State – and probably right in his own blackened and battered chili pot. In Spanish, the word chili refers to a “chili pepper”, and carne means “meat”. The recipe used by American frontier settlers consisted of dried beef, suet, dried chili peppers and salt, which were pounded together, formed into bricks and left to dry, which could then be boiled in pots on the trail. The San Antonio Chili Stand, in operation at the 1893 Columbian Exposition in Chicago, helped people from other parts of the United States taste and appreciate chili. San Antonio was a significant tourist destination and helped Texas-style chili con carne spread throughout the South and West. Chili con carne is the official dish of the U.S. state of Texas as designated by the House Concurrent Resolution Number 18 of the 65th Texas Legislature during its regular session in 1977. During the 1880s, brightly dressed Mexican American women known as “chili queens” began to operate around Military Plaza and other public gathering places in downtown San Antonio. They appeared at dusk, when they built charcoal or wood fires to reheat cauldrons of pre-cooked chili. They sold it by the bowl to passersby. The aroma was a potent sales pitch; mariachi street musicians joined in to serenade the eaters. Some chili queens later built semi-permanent stalls in the mercado (local Hispanic market). Before World War II, hundreds of small, family-run chili parlors (also known as “chili joints”) could be found throughout Texas and other states, particularly those in which émigré Texans had made new homes. Each establishment usually had a claim to some kind of secret recipe. As early as 1904, chili parlors were opening outside of Texas. After working at the Louisiana Purchase Exposition, Charles Taylor opened a chili parlor in Carlinville, Illinois, serving “Mexican Chili”.[3] In the 1920s and 1930s chains of diner-style “chili parlors” grew up in the Midwest. As of 2005, one of these old-fashioned chili parlors still existed on Pine Street in downtown St. Louis. It features a chili-topped dish called a “slinger”: two cheeseburger patties, hash browns, and two eggs, and smothered in chili.[4] One of the best-known Texas chili parlors, in part because of its downtown location and socially connected clientele, was Bob Pool’s “joint” in Dallas, just across the street from the headquarters of the elite department store Neiman Marcus. Stanley Marcus, president of the store, frequently ate there. He also bought Pool’s chili to send by air express to friends and customers across the country. Several members of General Dwight Eisenhower’sSHAPE staff during the early 1950s were reported to have arranged regular shipments of chili from Pool’s to their Paris quarters. There has forever been a controversy about ingredients: beans, no beans…..tomatoes, no tomatoes…..and on and on. We like BOTH in ours! In a large saucepan, add one batch of Farm House Chili Mix (about 2 tablespoons) to one pound of cooked meat (ground chuck), one can tomato sauce (15oz), one can diced tomatoes (28oz), and two cans of beans (kidney or pinto, 15oz, drained & rinsed), add chopped onion & garlic if desired. 2. Bring to a boil, cover and lower heat, simmer for about 30 minutes. Stir occasionally. 3. TAKE A LOOK AT ALL THE POSSIBILITIES! DESSERT DIPS AND FRUIT DIPS – These mixes are a natural for creating marvelous dessert dips and fruit dips. SERVING SUGGESTIONS – If you are making a dip, serve with animal crackers, graham crackers, or fresh fruit such as apples, orange slices, pears, peaches, cantaloupe, grapes, etc. There are also two other relatively new products on the market that are wonderful too. One of the most popular ways of serving your dip is with these bite sized, graham cracker “dipping sticks”. They are made just for this purpose. Your dip will taste like a cheesecake with graham cracker crust. Another product available are mini, bite sized Vanilla Wafers. They are about the size of a dime and are wonderful. If you are having a party, we suggest at least two batches of dip. You can try two different flavors with two different serving ideas, such as one dip with dipping sticks and one with mini Vanilla Wafers. Here are more good ideas! Fill tart shells with our dessert dips and then add some of the toppings below. The dips also act a great filling for cannoli or cream puffs. Another idea great for parties is to buy these paper “mini paper bowls” similar to cupcake baking liners. I think they are used for serving mints or nuts at social events. Put a full sized Vanilla Wafer in the bottom of one, fill it with our dessert dip and top it off with one of the toppings listed below in TIPS. Wow, is it ever good. Try two or more different flavors and toppings. Your guests will rave about them! CHEESECAKES – One prepared package of mix will fill a 9″ graham cracker pie shell. It will be level at the top of the crust, but not mounded high. The toppings you use will add beauty to your cheesecake. (See TOPPINGS below under TIPS.) You can make our cheesecakes with cream cheese and Cool Whip or 16 oz. of cream cheese only, if you want a thicker consistency. If you don’t use the Cool Whip, you may wish to add some sugar to the final product to make up for the sweetness that the Cool Whip normally provides. Artificial sweetener can also be used, if needed. SPREADS – Spreads are made the same as cheesecakes, above – with or without Cool Whip, depending on how thick you want the spread to be. I suggest using the Cool Whip version. If you use all cream cheese, you may want to add some sugar or artificial sweetener to the product for added sweetness. These spreads are fantastic on bagels, waffles, nut breads, toast, muffins, cookies, graham crackers, and pancakes. Use them between cake layers and as icing for an unbelievable Boston Cream Pie! CHEESE BALLS – For a cheese ball, you will want to use all cream cheese (16 oz) – no Cool Whip. You may wish to add some sugar or artificial sweetener, if you feel you need it. Keep it in the refrigerator for four hours. Roll in a TOPPING listed below, or sprinkle a topping on top of the cheese ball. Great with fruit slices, butter cookies, chocolate covered graham cracker cookies or regular graham crackers. CREAM PIES – Use both cream cheese and whipped topping for this recipe. You may also freeze the pie and serve it semi-thawed if you like it that way. I like my cream pies mounded high. One prepared package of mix will bring a 9″ graham cracker (or chocolate cookie) pie shell to the top of the crust. If you wish to have a higher mounded pie, as I do, use another half batch of mix. (You can freeze the other half.) Another option for a higher mounded pie with our Banana Cream Pie dessert mix, is to add one to one and a half bananas – sliced, and put into you finished pie filling. Fold it in gently and it adds enough extra volume to fill the pie shell with a nice high mound. With our other dessert mix flavors, you can add many of the TOPPINGS listed below to create a higher pie or just because it adds another delicious flavor to your wonderful pie. PARFAITS – What a dazzling display of color and flavor you can make with parfaits using our dessert dips. Add two or more flavors of dessert dip, alternating between layers of whipped topping, fresh berries, chunks of pound cake, and whatever else your imagination dictates. Use some of the TOPPINGS listed below and you can’t go wrong. MOUSSE – The easiest way of all to serve our delicious dessert dips. Just mix them up with cream cheese and whipped topping and put them in serving dishes with a TOPPING listed below. Grab a spoon and get ready for the compliments. CAKE FROSTING – I met a lady at a craft show that told me she uses my dessert mixes as a cake frosting. The cream cheese and whipped topping version is the perfect consistency for luscious cake frosting. It adds a whole new dimension to your cakes. It’s kind of like a Boston Cream Pie, but it’s a cake. And remember, you can freeze them. What a great idea. TIPS TOPPINGS – There are many things you can use to top your delicious desserts. They include mini chocolate chips, (also available in peanut butter, butterscotch and white chocolate chips) shredded coconut, Heath Bar pieces, Reese’s Pieces, crushed candy bars such as Nestle’s Crunch, M&M’s, crushed graham crackers, Cool Whip or other dairy topping, fresh fruit, candy sprinkles, crushed nuts, and much more. SERVE IMMEDIATELY. This semi-frozen state allows the slices to stand up on your plate. However, don’t let it thaw completely or you’ve defeated the whole purpose of freezing it. Put a full sized Vanilla Wafer in the bottom of one, fill it with our dessert dip and top it off with one of the toppings listed below in TIPS. Wow, is it ever good. You can make our cheesecakes with cream cheese and Cool Whip or 16 oz. of cream cheese only, if you want a thicker consistency. If you don’t use the Cool Whip, you may wish to add some sugar to the final product to make up for the sweetness that the Cool Whip normally provides. Artificial sweetener can also be used, if needed. SPREADS – Spreads are made the same as cheesecakes, above – with or without Cool Whip, depending on how thick you want the spread to be. I suggest using the Cool Whip version. If you use all cream cheese, you may want to add some sugar or artificial sweetener to the product for added sweetness. These spreads are fantastic on bagels, waffles, nut breads, toast, muffins, cookies, graham crackers, and pancakes. Use them between cake layers and as icing for an unbelievable Boston Cream Pie! CHEESE BALLS – For a cheese ball, you will want to use all cream cheese (16 oz) – no Cool Whip. You may wish to add some sugar or artificial sweetener, if you feel you need it. You may also freeze the pie and serve it semi-thawed if you like it that way. I like my cream pies mounded high. One prepared package of mix will bring a 9″ graham cracker (or chocolate cookie) pie shell to the top of the crust. If you wish to have a higher mounded pie, as I do, use another half batch of mix. (You can freeze the other half.) Another option for a higher mounded pie with our Banana Cream Pie dessert mix, is to add one to one and a half bananas – sliced, and put into you finished pie filling. Fold it in gently and it adds enough extra volume to fill the pie shell with a nice high mound.
