Our Denver Spice brand 1/2 Cracked Black Peppercorns is our most coarse grade of “ground” Black Peppercorns. In this case the 1/2 does not indicate that the Peppercorns are cracked in half, but rather the screen size they have been processed through. In general, this produces Peppercorns that are anywhere from 1/4 to 1/3 of an entire normal sized Peppercorn. This grade is most frequently encountered by most people in Summer Sausage (see example picture), but works well in a wide range of creative meat and cheese preparations. 1/2 Cracked Peppercorn provides big bold pops of Black Peppercorn flavor and is ideal for robust preparations where big flavor is a must have. We supply a wide range of food industry pro’s and up and coming competitive meat cooks with this grade of Peppercorn to give them the edge they are looking for. The product comes packaged in a resealable poly container and has a shelf life of at least two years when stored away from heat, sunlight, and moisture. This product does not need to be refrigerated.
