After a long search, I came across a small shop in Agios Nikolaos on Crete while looking for high-quality, tasty and gently processed spices and teas. The store called “Elixir Herbs & Spices” only has approx. 20 m² and is located in the heart of the small town not far from a small fishing port. The name "Echinacea" comes from the Greek word for hedgehog: "Echinos". In fact, the base of the flower with its many small tubular flowers is reminiscent of a prickly hedgehog. In German, the name “hedgehog head” is derived from this. However, a more common name for this plant is “coneflower”. The herb-like flower originally comes from North America. It is now also planted in Europe because of its pretty flowers. We only use the above-ground part of the purple coneflower for our Echinacea herb. Th.
