Extract beans are dryer than gourmet beans but have the same flavor. They are prefered by the extractors because they can get "more flavor" per pound because of less water in the beans. Our beans are packaged in a recloseable polypropylene bag that can safely store the beans after opening. Vacuum bags once opened are not useful for storageAlmost all Madagascar beans are grown without pesticides and insecticides. Most shippers there call them "organic" but none have any certification (ask them for documentation)
