Sri Lanka produces about three quarters of the total world production of cinnamon. As this tree is indigenous to Sri Lanka it was a wild plant found in the jungles by first decedents of the island, historically in the old Testament of the bible cinnamon was mentioned as;“ The lord spake unto Moses, Take thou also unto thee principal spices , of pure myrrh five hundred shekels, and of sweet cinnamon half so much and thou shall make of it an oil of holy anonitment , And thou shalt anoint the tabernacle of the congregation therewith and the ark of testimony (Exodus 30:23-26) “ By sensory evaluation of different varieties of cinnamon , planters may have led to find sweet and honey varieties only to cultivate and propagate in the island with specific intrinsic quality , which cannot be matched with any other cinnamon variety. Another key difference between the two is found in the taste. Cassia cinnamon tastes stronger and hotter while Ceylon Cinnamon is full of lighter, brighter tones. Ceylon cinnamon commands a premium price, that is, more than 3 times the price of Cassia cinnamon. For example, Indonesian cassia sticks are as high as USD4,000/tonne C&F EMP While Sri Lankan cinnamon sticks were said to be around USD12,000/tonne C&F EMP.Most of the cinnamon production takes place in the Southern region, in the coastal area of Sri Lanka . Ceylon cinnamon has 4 different grades, ranging from A category to H category. Among those, C5 and C4 are the most popular varieties. Due to the climatic and soil conditions of Sri Lanka, C-grade tends to be produced more than others. C-grade is dependent on the ‘softness’ of the trees. The Alba refers to the highest quality variety. As the number of the grade gets higher, it is recognized as having better quality. For example, C5 is the highest grade while C1 is the lowest grade within the category.Furthermore, compared to ordinary Cassia Ceylon available around the world, Ceylon Cinnamon contains very low Coumarin levels. It doesn’t damage regular cinnamon consumer’s liver. Ceylon Cinnamon is mild and slightly sweeter compared to Cassia Cinnamon which is a little spicy.
